These turned out nice with the Salty and Sweet roll combo.  You can certainly go less rub to cut down on the salt if needed. I love salty things on my grill.

I've used all kinds of rub combinations and the pepper pairs really well with the molasses. Trust me on this one.

They certainly have their…

They certainly have their place.  I'm ok with the Pellet cooker as they are super easy to use and typically put out a great product.  I like the REC TEC and the Green Mountain pellet cookers.  If you have some coin, look at the Memphis pellet grill.   They can run in the $5,000 range tho.  Or look into the Yoder smokers.  The pellet grill is very versatile.

If I were going to get a pellet grill, it would be a REC TEC.  I've heard nothing but positive things from friends with RecTec smokers.  I love the Memphis, but the cost is prohibitive at $5K, so REC TEC it is.  Let us know when you pull the trigger.

These don’t smoke bad at all. Get the cast iron hot over medium heat. Coconut out or avocado oil would be fine. Use 2 tablespoons of oil. Just enough to cover the bottom of the pan and get the bottom of the cakes crispy.

Substitute your favorite BBQ rub in place of the Old Bay. I’ve also used a little lemon pepper in my seafood recipes but a little goes a long way for sure. Let me know what you try.
